I have one 12" MA sub that's running off of an older kenwood 250 amp. Upgraded the big 3 and still notice lights dim when sub hits hard. Been pulled over once for "flashing" my headlights!!! Do I need a cap, even bigger power and ground wires, or just need to try something else all together?

What size power cable na d ground are you running? Did you meter your ground to confirm it is infact a "quality ground"? Also make sure to chack out vehicles factory grounds.

using 4 guage...metered all grounds all is good......using 0 gauge on the big 3

whats the output rms of that amp, I am not famaliar with it.

Whether you have 50 watts, or 50,000 watts, if your lights are dimming, your power source (your alternator) is too small. Period. You need a bigger one.

Take Haemphyst's advice, it all starts at the alternator. If you don't have enough power there you can't increase power with a cap and bigger wires.

From what you described (as far as gear) I don't see why there is a power starvation problem unless there is something significantly decrepit with your car's power system.  I too have an 01 Taurus and original alternator, with no starvation problems...probably running about the same load as you are.  Make sure you have a new or recently purchased battery that has not gone dead a few times.  After that, check junkyards for a replacement alternator.  There are a lot of these Taurus models available and shouldn't be hard to find or cost too much.
