I have got 2 12" star sound 1500W subs and was wondering if it's better to wire them using the max amount of ohms your amp can handle or or is it better to wire them using less ohms? In other words is having more ohms better than having less ohms?

If you wire for HIGHER ohms, (that is, less load) your amp won't make as much power, but it ALSO won't make as much distortion, or heat, and the damping factor will be better on it. Those are all good things in my opinion, with the exception of the "lack of power".
Keep in mind, that if you have an amplifier, connected to X woofer, it will make XdB. If you double the ohms (which is half the load) you will ONLY LOSE 3dB! Hardly even noticeable, and unless you are in competition, it WON'T be noticeable, especially in a daily driver.
