I have 2 kicker 12" L7 subs that are rated at 750rms watts each (375rms for each voice coil). They are DVC. They are 2 ohm subs. I was looking at your wiring diagrams for subs and found that you get a 2 ohm load if you wire the voice coils in series and the speakers in parallel. I'm going to use a kicker mono amp rated at 1500rms watts. This will work, right? Also i was wondering what kind of wires i should run from the amp to the subs and like between the voice coils and everything.

Yes, that would work just fine.  Use standard 14 guage speaker wire for the wiring.  Split the paired wire and use one strand to connect voice coils.  A lot of people will solder the wire to the speaker terminals but I like to disconnect quickly and cleanly when I want to, so I use disconnects and crimp / solder the wire to those.  Get some that fit the terminals snugly.
