I need help to figure out how to wire a safety so that the bike turns off if you press the brake without the key in  during remote start.

You're talking about a remote start in a motorcycle, correct?  All you need to do is find the brake light wire.  It's the wire that gets 12V when you pull the brake.  I don't have wiring schematics for bikes but i'm sure somebody on here might.  You could try finding the correct wire color at the brake light itself, then locating that same wire in a easier location,(maybe by your remote start brain).  You're remote start should have a brake shutdown wire on it, to of course hook to your brake wire.

What kind of remote start unit? What kind of Bike?

does it have a (-) hood pin input?  If so, that can be used as a shutdown.  You will need a relay to convert the 12vdc brake light signal to a (-) signal.

its a SPY on a GSXR 750
the only wires i didnt use are for the engine immobilizer so i need to wire this safety into the bike

you need to wire in a relay to the brake light switch so that when it is pressed it triggers the relay to open, breaking the power supply from the remote start to the ignition wire. do it on the remote start ignition power out wire. if you do it on the bike side, you'll be on the wrong side and the bike will die every time you press the brake even with the key in.

but then once you release the brake, power will be reapplied to the ignition

is ther a way to make it stay open until the alarm is reset or the remote start reactivated

instead of interrupting the ignition power, interrupt the main power for the remote start

The only reason the brake light wire secures an automobile, is the fact that you have to press the brake to put car in gear.  You do not have to press brake to put the bike in gear.  I would use the neutral indicator so when the bike is put in gear it dies.
