For one thing, every car alarm ahs its basic wiring. The valet switch, the led is the same in most system. You need a power source, a ground source and you need to know how to use a multimeter to test for certain wires. When dealing with cars that have airbag and other safety features you don't want to go around an poking every wire. The easiest way to learn is to do it on your own car. Buy a cheap alarm with the basic features and read the instructions, take your time and experiment on your own car. Understand that there is alot of risk in this, but hands on is the best experience.
