Is there a way to wire a light so that it will come on when a circuit is open and off when the circuit is closed?

Yes.

An easy way would be to use a relay.  When the circuit is open the relay won't be energized.  When the circuit is closed the relay will be energized.

More information about what you are trying to do might lead to a better answer.

Sorry, I will explain. I have an old jeep that has a lot of its original wiring missing. I am trying to get the backup lights to work. The wiring diagram looks simple enough. Red wire from switch to hot in run. White with tracer from switch to backup lights. The only problem: when I wire it up, the lights are on in every gear BUT reverse. First I thought maybe the switch was bad but the new switch is the same way. I thought maybe I missed something but thats it. How would I wire a relay like that?

Is it possible that a single throw relay can have two 87 pins?

Yes, they make them with two 87 pins.
