This link here https://64.85.6.118/diagrams/diagrams.asp states that my 2000 gmc sonoma has an ign 2 wire which is white but the link on this site states that it should be orange. Which should I follow?

Connect all ignitoin wires at the harness, but that white one must be used as an ignition 2 to enable remote starting! ------------- COMMIT YOUR WAY TO JEHOVAH AND HE WILL ACT IN YOUR BEHALF.

Would you know what readings I should be getting on the white wire?

Ignition (+) Input | Connect to a source that has (+)12 V DC only when the ignition key is in the run and start positions. See your installation manual for more info.

The pink and white wires read 12v in the run and crank positions so I've tapped into those wires. There is also an orange wire which some diagrams state is ign 2. This orange wire reads 12v in every position including when the key is removed. Should I be tapping into this orange wire as well?

The orange wire is an accessory wire. It will not read 12v when the key is off, and it will not read 12v when the key is in the crank position. You must have the wrong orange wire.
This is an easy truck
pink and white are ignitions
orange is accessory
brown is not needed.

Meters? It just cost me $5 for a bulb for my snap-on tester and it's still faster than a meter on non-data systems. Mr. Old school
