I have read the newbies/advice thread. Checked either side of the year make and model of my vehicle. 350z 2005. So now I come to those who know.

I want to install a starter interrupt. If I put a switch on the starter wire wouldn't that do the trick? Simple that I only turn it off when I want to disable the car from starting but then just leave it on the 75% of the time.

Yeah a simple toggle switch would work for you. But if it's manual it can obviously still be push started.

And the switch should be capable of handling 20amps unless you use a relay.

I personally would use a relay but in that car I believe you have two starter wires so make sure you handle the situation accordingly
