Putting a remote start in a 1999 Volvo S80. Im looking to know what type of bypass will I need and Im also looking for a wiring diagram.

Use a tbxkey or 556uw for the bypass if needed.

How will i know if a bypass is required?

If you have a straight steel key then no bypass is required otherwise you most likely will need one.
