I installed a Viper remote start into my wife's 2002 VW Jetta some years ago. I used a DEI 556u (or 555u) to bypass the immobilizer. For the antenna portion, the unit came with a disk that peel away the backer and stick it against the ignition. It has two small wires running to it. Well, those wires have broken off and now the remote start doesn't work. I re-soldered them once but it didn't take long before they broke again.

What is the best option to replace the antenna?

Can I make my own using 28 gauge wire wrapped 7 or 8 times and then solder the two wires to either end?

Do I try to source a replacement antenna? If so, where can I buy just the antenna?

Do I wire directly into the VW wiring? I did this with my BMW and it worked great. I don't remember the VW's wiring but for some reason, I just went with the adhesive disc.

The newer 556UW doesn't use the antenna portion on VWs and BMWs which is probably how you did the BMW, I don't know if the earlier 55U is capable.
