I am installing this on a 04 Audi Allroad but the ring is about double the size of the switch. What do I do, double wrap it? Zip tie the excess to the side? Does this car work better with the ring or using the factory ring?

usually I use a tiny zip tie to make the UW ring just slightly larger than the cylinder ring so that it gives it a tight fit and doesn't move. Then I tuck away any excess so that it doesn't interfere with putting the steering colunn surround back on. I believe on those you can use the factory ring though... check the uw instructions...

Don't use the ring, read the instructions and wire as per European vehicles. It won't work properly with the ring.

I wouldn't have used a 556, I'd have used a CAN sniffer and by-pass, I think you're going to have problems with the factory alarm, door triggers etc. if you try and hard wire it.
Go to Fortin, Xpresskit etc.

I tried the ring first and it works some of the time. I didnt want to cut any more wires but i think i am going to try the factory ring and wire per the euro instructions. What happens if that doesnt work either? Can i just solder the factory wires back together? I am just concerned with reliability of using the key normally too. I dont want to be stranded somewhere. This car i have to pull airbag and wheel to get in the column

The reliability of you doing it Euro-style is how well you solder your connections and yes it can be undone, I've done it more than once on VW products.
Ref getting at those wires, it's actually easier to pull out the gauges
(instrument panel) because you can then access the whole loom including those wires which are green and GREEN/ black if I remember.
