What trigger would be the best option for a ghost valet switch?
Preferably something I would have to cycle 2x for a one count.

cruise control, but the key still has to be in the on position.

Cruise is a great idea. But is it gonna be data like steering wheel controls ?
I have used hazards in the past because it cycles it self but it's a pita to get to in my car.

I've used cruise many times and found an analog signal for most new cars. On some cars that I couldn't find the signal, The defrost is what i used.
That's pretty stealth, as not many people go for the defrost button. Plus the added benefit is it only turns on with ignition.

I've used the power-mirror buttons a few times, as long as the car has a power mirror switch that's inside the car, instead of in the door.
The power-mirror switch generally has a bunch of negative-trigger wires when you push the buttons, and the buttons are momentary...just what you want.
Also, most cars have a left/right selector to choose which mirror you'll adjust, but there's almost always a center-detent position that some customers don't even seem to know about. Leave the selector in the center and the 4-way mirror-adjust buttons are no longer active. This way, you can use your "hidden switch" without affecting the position of the mirrors.

I've used high beam switch or window switches in the past also left or right turn signal switch

with one of my old 74 lesabre convertibles i had the help from a few miniature micro switches and a relay.
you had to open the ash tray, push in the lighter (that wasnt hooked up as a lighter anymore, it just grounded the relay), close the ash tray, and pull the emergency brake release handle (that powered the relay letting it send pos pulses to the ghost) 4 times.
micro switches mounted to the ash tray made the system not work unless the ash tray was closed.
