Hi
I was wondering does anybody know how to strip the center console?

I need to strip down the area where the radio is so I can mount he alarm module behind the heater controls. I also need to route the wires to the door in order to tap into the central lock system. I can remove the heater control easily it's the little storage area below.

Suppose I'd better answer 'cause no one in the US even knows what a Polo is!
There should be a cover plate around the radio which prises off using Bojo trim tools.
There will be 4 x T20 screws holding the radio.
Once you remove the radio, you can then remove the heater controls.
Word of caution, if there's a passenger airbag warning light on the radio cover plate do not disconnect this with the ignition on, it will bring on the airbag warning light.
Now a question; in every VAG car since the Golf Mklll, I've mounted the alarm control unit under dash right hand side.
All the electrics are there and the install will be much easier giving you easy access to the driver's door.

I just thought if I was a thief then the first place I would look is the dash on the right hand side. I think you misunderstood me I can remove heater controls and radio but I need to remove the little shelf area behind the gear stick so I can stick my arm behind to get the wires through and over to the door

If the thief can get to the right hand under dash, then what's the point of having an alarm in the first place?
Let me assure you the first thing to go will be the siren.
Typical amateur reply, too much thinking, too little installing.
Think it through, I haven't done a 2012 but I'm 100% certain nearly all your electrical connections (soldered of course) will be there, indicators, ignition, constant and ground, plus running through to the driver's door for your lock and w/close.
Hence get under dash and cut the obvious non-factory wires, don't suppose for a moment as an amateur you'd have though of black fabric tape to stealth things?
So what's the point of wasting all that time and probably having to extend cables?

What are you installing anyway?

And the answer to removing that lower panel? A Bojo removal tool or a lock blade pen-knife. Squeeze in the edges, it probably pops out.
To find you're dangerously close to fouling the shift linkage.
