I am installing a Peripherial NSS to allow remote start on a manual safely. It says "Connect this wire to the (-)  wire of only one of the injectors."
This is not the same wire as the tachometer wire of the remote start, correct? I think that one is (+) AC.

Would it be easier to find it in the same bundle that I hooked the tachometer wire into at the coil pack instead of going to an injector?

The injectors are (-) AC for remote starter's and it will be any of the uncommon colored ones that you want to tap into.

So I can tap into the same wire that I used for the tachwire of the RS?

Yes you can, but there are 3 other's ( if it's a 4 cylinder ) that you can use. I suggest using a different one personally.
