I know I have come to the right place! Here we go.
I would like to put a remote start/keyless entry/alarm
on a 2000 Beetle Diesel with a MANUAL TRANSMISSION.
I was told that this was possible. OK, An installer told
me that he would need an extra key in order to do this.
I was hoping that there was a way to install this without having to buy and extra key ($130, ridiculous).
Does anybody know of a system I could install that would
bypass the transponder/car immobilizer on my bug without
having to buy an extra key?
I would greatly appreciate it!!

There are many manufacturers and models of remote starters to choose from. To be safe, before you order the bypass kit, double check with the company for compatibility with your vehicle. -Michael

Oops! That unit is only a doorlock interface - sorry! If I come across a bypass kit for VW which doesn't require a key, I'll post a link. Again, sorry for any confusion. -Michael

Using the valet key will do the same as the switchblade key for the ignition. The valet key is much cheaper in price, about $ 40.00 and the programming of it. You don't have to get it cut as it will not be used in the ignition cylinder.

Should I get the valet key through the dealer or would a locksmith be able to do it?

1) You have to get the key cut to program it unfortunately. Get it from the dealer, as they will have to program it for you. You can program it, as long as you have 3 things: The SKC (dealer must generate this number), Immobilizer code (to give to the dealer to generate the SKC), and a Vag-Com to retrieve the Immob. code, and to program the key. Head over to Ross-Tech.com to learn about this.
There are no "keyless" bypass units available for VAG products... highly doubt there will be in the near future. If you do not have access to a Vag-Com, try over at TDIClub.com, there may be a member near you with the ability to program things on your car, and besides, it is an excellent resource for us TDI drivers (I am Dieselgus over there)
Otherwise, not a bad install, tach can be found on the right ECM connector, light GREEN/ orange or light GREEN/ red. ECM is in the car, under big piece of plastic closest to windshield. Other than that, there should be a wiring spec here somewhere for the VW MKIV platform... NB, Golf, and Jetta are all the same as far as the basic underlying structures and systems of the car are concerened.
