If I set the starter signal for 4 seconds but the engine actually cranks in 1 second, will the sytem stop the starter signal at that point, or will the starter continue energized for another 3seconds?

it should  stop, thats why it has the tach wire hooked up to it to let it know its running.

But what if I use voltage sensing instead of tach sensing? Will it work the same way?

I have a dumb question, why not just use tach sensing. I have never tried it the way you are  suggesting because it seems completly unnessasary to me.

if you use Voltage sense it will crank for the set amount of time. if use tach it will crank until car starts. doen't matter hig long is set for. Word of advice go tach, trust me on this one.
