hi. anybody can explain what a valet button or mode does? thanks.

It is for valet's to use, duh!

At any rate valet buttons are used primarily for entering and exiting valet mode (basically disabling the alarm), shutting the alarm off if the remote becomes inop, and they are also used for programming the alarm.
