This might be a dumb question but what exactly is disarm defeat???

Used on keyless entry upgrades alarms. It is usually the passenger's door unlock wire and tells the alarm that either the switch is being used to unlock the doors. Basicaly these alarms rely on pulses on the lock wires from factory remotes, but when you hit unlock the first time usually only the driver's door unlocks. When you hit it the second time or use the switch, all the doors unlock. It prevents the alarm from disarming when the lock switch is being used.
