according to this diagram.. Why 2 relays? Can anyone tell if this can be done with one relay? If so, is there any benefit whatsoever to using two? I figure that The head unit is only being used to energize the coil and provide continuity for the starter wire. The starter wire should have its own 12v source when the key is in the start position... Right?

That is exactly what it says:
Passive Starter Kill ....( One Relay )
WITH
Remote Turn On Lead ( For Turning On Amplifiers or Power Antenna )

sorry...i'm really new at this. So if I dont need to turn on any amps, or power any antennas, then I could get away with one relay. Using the power antenna lead from the head unit to interupt the flow to the coil? I.E. when the head unit is'nt on, the vehicle won't start??
