Are there any brands of relay(s) that one should steer clear of? SPDT to be specific.

If you are going to be pulling a lot of current through them, a Bosch/nowTyco device will be your best bet. If you are pulling small amounts of current through them, they will all be about the same for that application.
I see now why I was having troubly finding "BOSCH" relays at any online suppliers. TYCO is everywhere. I tend to stick with the better end of products when it comes to this stuff thus, I was looking for Bosch now I've found them , TYCO.

May I ask one more question: What is the item called that you would run, let's say a #8 wire into it and then have multiple lugs/teminals coming off of it for #12/#16#18 wires.

"distribution block", "junction block", or "junction box" are a few terms it's called
That's was looking at but, all that Ive found are ones for the same size wire end to end. Is there such an animal that will accept a #6/#8 wire say coming in the end and then the junction block o attach everyhing else to or do you simple "neck down" the #8 and hook it up?

Also look at the current capacity of the relay. Most SPST (4 terminal) relays will handle 30-40amps. Most changeover SPDT (5 terminal) will handle abpout 25% less.
Most OEM on anything but Japanese cars use Bosch or Tyco/Ampliversal*
Most Japanese use Omron or Panasonic. All those makes are good.
*Ampliversal (a.k.a. AMP) and Molex make most of the connectors on a car.
