I know what a relay is and how it works, but I was curious with respect to the 85/86 prongs that energize the coil, does it matter which has 12V and which has ground? I know whatever you put on one you need to put the opposite on the other, but does it matter which polarity goes on which terminal? Thanks.

Frankly no unless there's an in-built quenching diode, that will be labelled on the case, BUT international convention says 86, coil+ 85 coil-. N.B. with internal diode the + will ALWAYS be 86.
