Hi,

Is there any way I can wire up two SPDT relays to form one DPDT? I looked through the guides and special applications but didn't really see anything, course I'm a novice, I probably passed right over it.

I wanna do something like this,

but with SPDTs if possible.

Yes you can.
wire the coils of the two relays in parallel. Use one for the top contacts and the second for the bottom contacts of the DPDT relay.
