im running a video system and im hooking up 2 monitors, power converter for PS2, a video amp to slpit the signal and a FM modulator. im running all of these off a 30/40 amp relay. now do i just add up the power draw from each component and just use that size fuse on the 12v.???

I would isolate the inverter to another relay, because it will probably bring you above the 30 amp point with everything else. But yes just add up the values and put an appropriate fuse in place, IMO not exceeding 30.
