I went out to get me a couple relays today and all I could get my hands on were Hella 40a relays.....I'll be using them for RKE...should I be worried about the higher tolerance? Can I still fuse the 12v lines at 30a? OR should I return them and find me some 30's? Would adding diodes help?

The Hella relays will work fine. Adding a diode across the coil is always a good idea, regardless of the brand of relay, unless of course they already include one.
