I have added three lcd screens, two DVD players, IR transmitter for headphones and an FM modulator (until I get my new head unit). I purchased a six slot fuse panel to distribute the 12v source. My question is can i add a relay ahead of the fuse panel with power from battery for 12v source and power from ignition to activate the relay? If what I am thinking will work, what kind of relay is suggested?

Yes a standard Fog light Relay will do just fine.
