I am trying to use the old harness to the stock amp and splice it into my new amp/sub. 70-5521 or would I have to use one of these, well hopefully not, all the wires I need for the amp (minus the power which i will run myself) are already in the cargo area ready to go

If you have a volt/ohm meter, it should be pretty easy to figure out the wiring at the amp end.  There are only a few wires on the input plug of the amp.  With the radio turned on, ground the black meter lead to a known good ground.  Now touch the red lead to each wire in the input harness, you should find a wire that shows 12 volts, label it and turn the radio off.  If it does not have 12 volts on it with the radio off, that is the remote (or amp turn on) wire.  Now set your meter to ohms.  Black lead still on the known good ground, touch the red lead to each of the other wires, there will be one wire that reads anywhere between 0 ohms and 120 ohms.  Label that as the shield.   How many wires do you have left at this point?  If you have 2 wires that make your meter respond in the same manner, they are your signal wires.  There may be only one signal wire.  I do not know if they mono it coming out of the radio or mix it in the amp.

If there is a 6 volt remote turn on voltage going to that amp, you may have to run a new wire and tie it into the switched wire of the radio.
