Here is the circuit I am trying to build for my S10 intrepid fan conversion; I am gathering all of the parts but hit a road block. I need to know what amperage relays that should be used in this circuit, and is the gauge wiring shown in the circuits EX. (bottom wire of the fans 12 gauge BLK)?

From looking at the fuses you will probably need higher current output relays, such as 60 amps or more. Having said that you could try a pair of standard Bosch type relays which are 40 amps rated. Get 4 pin not 5, the five pin are only rated at 30amps.
In those diagrams,
A = 86
B = 30
C = 85
D = 87
