Anyone know where I can get a hold of the wiring diagram for the stock stereo on a 2003 Altima 2.5S.

I think it's gonna be like the standard newer style nissan plugs (https://carstereohelp.net/wireharness_Nissan2.htm)

If you're installing an aftermarket head unit you should use a wiring harness such as the Metra 70-7550.
