Headrests in the field are what we do and rather than cut them in we order them pre loaded. Companies like Rosen and Audiovox will ship you a complete headrest kit for practically any car made and all you do is replace the existing headrest with the new, very easy. You can place an order up till 3pm and have them the next morning, ready to install with matching vinyl. I like the Rosen sets, they come in two parts. You order the headrest and the DVD separate and put them together on the jobsite(takes 1 minute to assemble). This way you can carry spare DVD's in stock and just order the headrest to match. We are a big company and do a good 50 plus sets a month this way. Also, you keep inventory down because you order per car.
