I'm trying to wire my car so my backup camera and the display monitor turn on when I put the car in reverse. Currently, I have the camera turning on by tapping into the reverse lights...so I think that's taken care of. As for the display monitor...I think if I added that to the circuit powering the camera and reverse lights it would probably blow the fuse.

What I have in mind is using a relay that is triggered by the circuit powering the reverse lights, but using the constant 12+V power going to the cigarette lighter to power the display camera.

I really don't know how to wire relays and was hoping someone might be able to shed some light on this for me. I have a few AGT (MAH-112-C-1) relays. Is this suitable for my needs? I've seen other posts claiming that the 85 is the ground, but the wire harness that came with the relay has a red wire in that position...which I believe is usually used for constant 12+V...so I'm a little confused and would love some clarification.

You can use a relay if you wish, but it will not blow the fuse.
