I saw a mitsubishi eclipse with a screen where the gauges go and the screen actually displayed the gauges does anybody know how to do that is there some kind of equipment you can get that reads the info and has a video output?

Do a google search for "HKS camp". It is something similiar to what you are looking for. There are many kinds of different systems that can do these functions.
