Can any one tell me or point me in the right direction for what wires in vehicles do I look for as a power sources for mobile electronics (i.e monitors, FM modulators

Go to the ignition harness and use a DMM to find the switch ignition or the constant wire. All vehicles are different, but all have ignition wires by the driver's dash.

Check the current draw, too. You may want to separate power to the multimedia equipment with a voltage source from the battery, and then use a turn on (acc) line like VM suggested. I usually fuse the line from the battery, and run a separate line for the video.
