how do I remove the headrest from the seat, and how do I take off the leather wrapping from it

I tried a headrest from an escort and it was pretty easy it just had staples in the bottom

Htere should be a dial or button at the base of one of the shafts. If pressed or turned, it will release the head rest and pull straight up. You will need to look at the base of the headrest and see how the clip is retained in the bottom to hold the leather inplace. SOme use plastic plugs that you pry off other use a locking type plug that you need to push in the center pin and release the outer plug.

the navigators and expeditions use a metal pin you need to push in to release the headrest. use a metal 90 degree pick

No it is prob too big.  Just use a pick or a old crappy test light.
