My Boss recently purchased a 2003 Cadillac STS. He is looking for away to defeat the motion safety to allow his kids to use the video while driving (Factory Bose in-dash). Does this info come over the serial bus or is there a wire that can be connected to ground (pioneer  style)

Please understand it is illegal in all 50 states to have a functioning video screen in view of the driver while a vehicle is moving. Installers should beware that they could be held liable if they knowingly bypass the safety interlocks on any DVD or video screen.
