If you got the $$$ get some headrest from https://www.myronanddavis.com/ 

The headrest are actually made around the headrest and are very secure, and I belive you can even get them to put a caddy symbol on it too. Very good product in my opinion, just a little pricey.Or just check ebay for some replacments for someone to cut em in. Good luck

Most if not all monitors have a M-Bus style plug that has the power, ground and trigger to operate them as well as a female video cable. IMO, I would just get the headrests that you have now and use them for the monitors & in the mean time look for replacements over the net or at a recycling yard. Installing these will be fairly easy, but just make sure that you have enough width for the 8" monitor because most head rests taper up and have a smaller top than bottom.
