I have a question concerning the input sensitivity of an amplifier.  I was planning on purchasing a Phoenix Gold Route 66 amp.  I noticed that the input sensitivity on this amplifier is from 200mv to 2v.  My head unit puts out 5 volts.  Would this damage the amplifier or make it perform negatively?  Thanks

no

the input sensitivity on the amplifier has more to do with how much it changes, not what it wants to see.

All it means is that you'll be working in the low volume ranges of your headunit most likely. Not a problem at all, the amp shoud just dump the extra input voltage.
