I'm really not trying to be a smart a$$, but I would just take it off myself and leave it off. What would anyone ever want with those, aren't they plastic anyway?
I cant imagine a shock sensor would really do much since you really only use a prying motion to get it off, and you would need the sensor set pretty sensitive for it to pick up that anything was going on.
Good luck.

Put a motion activated camera pointing to the front and back. Use an older laptop and web cams - some logitech cameras have motion activation feature.

That way you'll know the $ucker(s) who's been stealing embles.

Leaving the emblem off would leave 2 holes though. Why not just use a vinyl cutout if you like to have the emblem there.

Attach a ground loop wire to the emblem & if someone pulls the emblem off this will open the circuit and set the alarm off.

If all you're worried about is them using a screw driver to get the emblem, why not just attach it some in some way that the don't need the screw driver to take it?  Or take the emblem off and use a vinyl decal like phamine suggested.    Other than that.... I would think the radar sensor would be the best bet... might scare them off before they reach the emblem.   But for the most part, it's pretty quick to snatch, so who's gonna care that much if they set the alarm off?
