I have this amp, http://www.memphiscaraudio.com/products/details.asp?cat=&id=64&p=2

I have these subs, http://www.infinitysystems.com/car/products/product_detail.aspx?prod=REF1252W&cat=SUB&ser=REF&Language=ENG&Country=US&Region=USA

I want to hook up the subs to run on 2ohms like the configuration below...

https://www.the12volt.com/caraudio/woofer_configurations.asp?Q=2&I=22

In the pic above it looks like the amp is bridged(one pos. & one neg.) Do I bridge the amp or not?

You need a different amp. In the diagram you are looking at the amp is bridged to run at 2 ohms, but the problem is your amp isn't rated for a bridged 2 ohm load, its rated to run at 4 ohms bridged. With those subs, I would find an amp that will do at least 600 rms @ 2 ohms, and will be easier to find a mono amp that does this. Most 2 channel amps that I have seen run at 4 ohms when you bridge them.

Your amp is not designed to be bridged into a 2-ohm load, it is stable at 4-ohms when bridged.  Fortunately for you your Ref 1252 woofers have DVC 4-ohm voice coils, so you should connect them to the amp, bridged, like this:

So if I hook them up like the above the subs will get 140 watts each instead of 100 watts each?

Your amp is rated at 280 watts into 4-ohms, so sure.
