If you're turning off the engine, the ignition is off before the accessory, so your relay energizes momentarily, and you can wire the normally open contacts (87 and 30) to output either a positive or a negative. If all you need is a pulse, this will work.
What I was pointing out earlier, though, is that anytime the key is in the accessory position (not ignition) this relay will remain energized.

So, it appears the relay only needs a trigger to activate the countdown. From the listing:
It is designed to switch DC electrical circuits with a voltage of 12 V. When the relay receives a “+”, it switches NO/NC contacts. When the "+" disappears, the contacts remain closed for a set time delay (0-60) (60-600) (600-6000).
That should work with your ignition and accessory suggestion, right?

Instead of putting a link to an ebay page, just list the item number (ebay links are not allowed and do not work) so people can search.
It'll work. You just need to change the output of the last diagram to positive voltage. The bottom terminal (30) will connect to a constant 12 volt source. Then the top terminal (87) will output the positive you need for your timed relay.

If you want to be able to sit in the car with the windows down and the key in the accessory position, install a hidden toggle switch on either the wire that goes to ignition or accessory so you can turn it off.

You'll just need to turn the switch back on when you want the auto roll up feature back on.
Another option would be the initial diagram I posted (three relay diagram).
