I have two Infinity Reference 1030w's, single coil 4-ohm, 250w rms. I've been told that the best way to wire them is to use a 2-ohm stable mono amplifier and wire them in parallel. I'm not really sure which amp would be best to that with, or how much power output I should even be looking at. My guess is 500W X 1 @ 2ohms. Help!

You guessed right. For those subs you want an amp rated around 500x1@2ohms. You can go higher, but I wouldn't go any higher than around 700x1@2ohms. There's a lot of amps in that range. A lot depends on how much you're willing to pay. Some immediate ones that come to mind are: Rockford Fosgate 500bd, Rockford Fosgate 501bd, JBL BP600.1, or JL Audio 500/1
