I am planning to install a Mopar remote starter on a 2004 Chrysler Pacifica.

I heard a rumor that the remote start FOB does not also control the door locks/alarm.  Does anyone know if this is true?

You are correct.  Door lock controls are in the head of the factory key.  PowerCode manufactures remote starters for Mopar and for Ford.  Ford systems are much more complete than mopar, but range is rather poor compared to new aftermarket FM frequency.
