Does anyone know of a company that sells a fiber optic (or TOSlink) automotive adapter? It would convert standard RCA output to fiber optics. Also, are there any amps that have built-in TOSlink inputs? Thanks :)

fiber optics is more for video than anything isnt it?  not into the fiber optic thing so not sure.  but have never seen one with that kind of input.
you can do it....
advanced MECP, lol does it really matter....

Optical is for digital audio.
Is this what your looking for?

That's a digital RCA to digital fiber optic adapter. We need to convert a RCA (analog) signal into digital (fiber optic). Thanks for trying though Alpine Guy :)

Here's my issue(s), take them for what you want...
1: Why do you feel you need fiber in a car? If noise is what you are worried about, use balanced, FAR more available, and less expensive, to boot.
2: ALL of those products listed sofar? One is a co-ax to fiber, not analog to fiber, one is a fiber to co-ax, and one is fiber to analog.
3: The fiber to RCA device, for only $79.00, what kind of quality can you expect from the output? Probably not much, and if you are going to the effort and expense of fiber, why skimp there?
Going to fiber from analog is not an easy task. It involves A/D conversion, which should be done at a high bit- and sampling- rate (and the higher, the better) to start with, (translation: expendy) otherwise, why bother going to the effort anyway. Once on the fiber, it is FAR easier to convert back to analog, but you still need high quality matching D/A conversion, (higher bit- and sampling- rates will cost more, again) as well as high quality analog stages. I still have an Audio Alchemy UltraDAC, which back then (I want to say... oh, '92, '94...) was only 300 dollars, but universally reviewed as one of the BEST sounding DACs around, especially considering the cost of it. D/A doesn't have to be expensive, but it needs to cost more than 79.00, I think.
By the time you find or build an analog/fiber/analog interface, you are going to be SO FAR beyond the point of diminishing returns, you're going to wonder why you are doing it at all. Bling? I'm all for bling... Hell, "esoterica" HAS been my middle name. (That one, and many others, I assure you.) Seriously, though, (unless you are wiring a 50 foot bus or motorhome, even then, balanced is EXCEPTIONALLY effective, and noise "immune") just go balanced, or even better still, choose HIGH(er) QUALITY components.
As far as any amplifier with TOSlink inputs? I've never seen one, ever. I've actually never even seen an amp with ANY kind of direct digital input. That is NOT to say they do not exist; I've just never seen one, even "back in the day".
It all reminds me of something that Molière once said to Guy de Maupassant at a café in Vienna: "That's nice. You should write it down."
