I need some sort of switching relay that will turn on with one input and shut off with a different input...
I am wiring in a pushbutton ignition and this relay will operate my fuel pump...I need the relay to turn on when the starter button is pushed, and shut off when I push the interrupt button (which will be a push button coil wire interruptor...)
anyone know where I can pick up such a relay or have any information on making this happen another way? any input would be greatly appreciated...

You could use a latching relay like the one shown below or you could use SPDT relays to accomplish this. The latching relay below only requires that the coil be momentarily energized to set and reset or to keep the two terminals closed or opened even after the coil is no longer energized. If you are using two different switches and they are both negative or both positive, you'll need to diode isolate each and connect them to one side of the coil of the relay. If one is positive and one is negative, you'll have to add an SPDT relay to change one of them so both are the same or you can use an SPDT relay on each of them and no diodes would be necessary.  If you want to use just SPDT relays, let me know what the outputs of each switch are and I'll draw you a diagram of an interrupt operated by two separate pulses.

OK...I will explain a little more here, as I am not exactly sure what you are asking...
I am removing my key ignition totally out of my car...I want to use one channel of my alarm as the accessory turn on, so I need the output of the alarm to energie a relay that will remain on, as this position "replaces" the accessory position of my ignition switch...and I need some sort of signal to turn this position off when the car goes off...I was thinking of somehow using an interruptor switch on the cars coil as a shutoff, and when I trigger the interrupt, it needs to turn the accessories off as well...
secondly, I need another one of these relay setups to power my fuel pump...I want the signal of my pushbutton starter to trigger a relay that will energize my fuel pump, and then leave it on until I shut the car off with the "interruptor" switch...
and then lastly, I am pretty clear on what I am doing on this one, but it will be the starter button, which will be a button that activates a relay which will energize the starter so the car starts...
I hope this makes things a little more clear for you and easier for you to help me achieve what I am trying to do...I think its irrelevant to me whether I use a bunch of regular relays or have to purchase latching relays...whatever gets the job done is fine...

I think I understand what you want to do, but just to be sure...  Do you want to power the accessory lead on and off with two separate pulses or outputs? Or would you prefer to use the same output from your alarm to power the accessory lead on and off as well as the ability to turn it off with the output of your switch?

This will provide you with a 12V+ output that will stay on with just a momentary negative output from your alarm. The negative output from your switch will turn it off.

This next one will also provide you with a 12V+ output that will stay on with just a momentary negative output from your alarm. The same negative output from your alarm will turn off the 12V+ output. The negative output from your switch (or a negative from another output of your alarm) shown at the top of the diagram will also turn off the 12V+ output.

you were correct, I want two separate triggers, one for on (starter button) and one separate for off (interrupt button)...
from my very basic understanding of relays, my question is how does the first relay remain on after the initial negative trigger from the alarm?
once the alarm triggers 86, it energizes the pole at 87, correct? but once it clicks to make contact, what holds it at 87 to remain in constant power? is there something I am not understanding here? does the third relay somehow keep the circuit open? I am really confused as to how this will work...

Yes, the third relay is the latch and maintains power until you interrupt ground to it's coil via the second relay. The first relay is only needed to engage the latch. You could use a positive alarm output to engage the latch, but will need a diode to prevent 12V+ from feeding back into the alarm output and any other devices that may also be triggered by it.
