I currently have a MTX 800 watt rms at 2 ohm mono amp and wanted to get two 12 inch CVX's.  I know the CVX is rated at 50 - 700 watts rms.  I also know I will be under powering both subs, but will they still hit somewhat sending both subs 800 watts rms?  I was thinking to go with 2 12W3V3 but not sure they will hit, probably will sound good though.  Plus they are only 300 watts rms per sub.  Thanks.

Will the subs hit pretty nice only sending them 400 watts rms each?

You should have no issues with 400 watts. Whether you realize it or not, that's a crapload of power!
It all reminds me of something that Molière once said to Guy de Maupassant at a café in Vienna: "That's nice. You should write it down."
