dimming LEDs is easy, use a potentiometer..... there is nothing weird about dimming an led.
the best way to dim them however, is to adjust the current, not the voltage, you can also make them brighter too, by feeding them more current, but this reduces lifespan and will blow them if you go too high.

For my info, how do you increase the resistance without decreasing the voltage? Just putting a pot in line should bring the voltage down, not the amperage, correct? Please explain this, I can't seem to figure it out tonight.

In parallel to the LED, changes the resistance of the circuit rather than the resistance of the LED itself?
