When I am testing output how much AC should I be reading on my meter? (or where should I set my meter to?) I am talking about speaker outputs on the headunit.

Are you trying to determine if the deck has output, or are you trying to determine how many watts your deck is producing?

Decks will produce 3-5 volts peak (ac) so if you set to 20v you should be safe.

voltage depends on the load.

At cilpping the meter should read around 9 volts.
