What is louder? Two 300 watt rms subwoofers, or 1 600 watt rms sub.

There is a specification on the woofers that we really need to help you.  What is the Sensitivity of each speaker?  Chances are the 2 woofers will be considerably louder than the 1.

Cool, I think you answered my question. The sensitivity rating of the 300w subs (92.9dB) was actually higher than the 600w sub (86dB).

It is more of a difference than you think.  If you double your cone area, you will increase your output by 3dB.

Throw wattage out the window, you hear in decibels. On a equal playing field, 2 subs will more more air than 1, thus two will be louder. This is not always the case though. Many factors, primarily the box will affect how loud something goes.

Thanks for your help, I am definately going to go with 2 subs instead of 1 for my amp.
