when i turn up my stereo [Pioneer DEH P3000IB] the lights and display on the faceplate dim, would installing a larger [8ga] wire fix it?

I am betting that you have your speakers connected to the radio.  If that is the case, upgrading the constant power wire for your deck should help with your problem.  However I do think that an 8Ga. wire will be overkill.  A 12Ga. wire ran directly to the battery and fused at 10 amps AT THE BATTERY should do the truck.  You may want to upgrade the ground as well.  12Ga. from the bolt hole on the back of the deck, to the chassis of the dash.

f you paralleled 2 speakers to one channel of the radio, you are asking a lot out of the OEM wiring of your vehicle.

The number of speakers won't matter.
What impedance do they present to the amp?
That determines their power consumption.
