Could I use a dpdt momentary switch with this setup, or would I need a spdt momentary switch?

You can use a dpdt switch, but you will use only one pole of said switch.

No need to cap off the unused 3 terminals.  You can use both poles if you wish.

so both the positives from the relays would go to both on prongs on the switch, and the off would be grounded?

Connect nothing to ground because at rest the grounds would be fed to the relays.

It has just occurred to me that with a DPDT switch you wouldn't even need relays.
