The camera shows in the mirror if there's no factory nav. On this truck i found it easiest to just go to the plug on the mirror for signal. Further up the plug 4 wires go into a coax cable feeding the camera. 2 are signal and 2 are power for the camera, don't remember which is what but it's easy to figure out. It is a 7 volt camera so use your DVM to determine which are right.

If it's a nav truck your SOL because the nav supplies the power for the camera.

Either way, nav unit or standalone monitor, you should be able to interface it with an aftermarket deck.
How many wires are there on the harness that supplies the monitor?
Does the monitor power up when you put the vehicle in reverse? or is there a separate power button?

The flip down was rare, but still a 7 volt camera. Back then Fugitsu Ten made all Toyotas stuff and all the cameras were 7 volt buy them. Have you tried looking further up the harness for a sheilded harness inside the monitor harness?

The previous image is exactly opposite of what you are trying to do.  The wire colors may help you with your project.
